How to use the turkey cooking time calculator

Enter the weight of your bird in pounds or kilograms and choose whether it is stuffed. Stuffing slows everything down, because the center of the cavity has to reach a safe temperature as well as the meat, so a stuffed turkey needs roughly 20 to 30 minutes longer. Pick your oven temperature, and if you know when you want to sit down to eat, add the serving time and the calculator works backwards to tell you when the turkey has to go in.

The roasting times are based on the standard guidance for a fully thawed whole turkey at 325 °F (160 °C), which is the temperature most recipes assume. Choosing 300 °F adds time and 350 °F takes some off, and both are adjusted automatically. A range is shown rather than a single number because oven calibration, how cold the bird is when it goes in, and how often the door is opened all make a real difference.

Thawing takes longer than you think

Thawing is where most Thanksgiving and Christmas timings go wrong. In the refrigerator, allow about 24 hours for every four to five pounds. That means a 12 pound turkey needs roughly three days and a 20 pound turkey needs about five, so a frozen bird bought on the Saturday before Thanksgiving is already cutting it fine. A thawed turkey can sit safely in the refrigerator for a day or two, so it is always better to start early.

If you are short on time, the cold water method takes about 30 minutes per pound. Keep the turkey in its sealed wrapper, submerge it completely in cold tap water, and change the water every 30 minutes. Never thaw a turkey on the counter at room temperature: the outside spends hours in the range where bacteria multiply while the middle is still frozen.

Getting it right on the day

  • Use a meat thermometer. It is the only reliable test. Check the thickest part of the thigh without touching bone, the thickest part of the breast, and the middle of any stuffing. All three need to reach 165 °F (74 °C).
  • Rest the bird. Twenty to thirty minutes under loose foil lets the juices settle and makes carving far easier. The internal temperature keeps rising slightly during this time.
  • Start breast side up and tent the breast with foil if it browns before the thighs are done.
  • Consider cooking stuffing separately. It is safer, cooks more evenly, and shortens the roasting time.
  • Plan the oven. Everything else needs space too, so a resting turkey is your chance to roast the potatoes.
